The Perfect Colcannon Recipe!

Servings: 4 - 6 Side Dish Servings
Ingredients:
4 large potatoes, peeled and diced
1/2 head of cabbage or a bunch of kale, finely chopped
1 cup milk
1/2 cup unsalted butter/vegan alternative
Salt and pepper to taste
4 green onions, finely chopped (optional)
Optional: Vegan Bacon or sausage - sliced and sautéed
Directions:
1. Boil the Potatoes: Place the diced potatoes in a large pot of salted water. Bring to a boil and cook until the potatoes are fork-tender, about 15-20 minutes.
2. Cook the Cabbage or Kale: In a separate pot, cook the chopped cabbage or kale in boiling salted water until tender, about 5-7 minutes. Drain and set aside.
3. Mash the Potatoes: Drain the cooked potatoes and return them to the pot. Mash them using a potato masher or a fork until smooth or until the texture is to your liking.
4. Combine the Potatoes and Greens: Add the cooked cabbage or kale to the mashed potatoes and mix thoroughly.
5. Heat Milk and Butter: In a small saucepan, heat the milk and butter over low heat until the butter is melted. Be careful not to let it boil.
