Kerri's 'Very Besto Pesto' has been a go-to recipe for many years!


This flavorful sauce accompanies the mouthwatering soups, salads, pasta dishes and more she features on her vegan and plant-based IG feed!


This homemade basil pesto is not only delicious, it is also filled with fresh ingredients that contain protein, vitamins, minerals and heart-healthy antioxidants- a winning combination!



Kerri has been making her own fresh pesto to enjoy for a while now, and we're looking forward to learning her take on this classic sauce!

"I’ve been making this pesto recipe since my daughter was a baby, and she has been a fan her whole life!


We have served it to both plant-based and non-plant-based eaters, and everyone always loves it!


It’s a pretty simple recipe because it requires no cooking and can be made in one appliance! It stores well in the refrigerator, covered tightly."



"Air makes basil darken, so you can do a couple of things:


1. You can fill a container to the top cover and leave no air space

or

2. Press plastic wrap right into the top of the pesto to help preserve its fresh color.


Rest assured, the pesto still tastes amazing!! The basil is experiencing *oxidation (see below). I hope you like it as much as we do!!"

Our Very Besto Pesto!

Recipe by Just Plant Fabulous


"We enjoy 'Our Besto Pesto' on pasta and pizza! It’s so fresh and lively and doesn’t use refined oil. ...And we love the savory addition of miso!"

- Just Plant Fabulous

Prep Time: 15 minutes

Yield: 3/4 - 1 cup

Equipment Needed:

Ingredients

  • 2 cups (packed) fresh basil leaves

  • 1 to 2 spinach leaves -optional- for vibrant green color, and a little extra nutrition!

  • 4 tablespoons nutritional yeast

  • 2 cloves garlic

  • 1/4 cup of raw organic walnuts

  • 3 tsp light sweet miso

  • 1/4-1/3 cup water

Directions:

  1. In a food processor or blender, process the garlic until minced.

  2. Add the walnuts until they are ground a bit and to your liking.

  3. Add in the basil, spinach, nutritional yeast and miso.

  4. Blend ingredients until very well processed.

  5. With the machine running, slowly drizzle water until you’ve reached your preferred consistency.

A Teachable moment - A little Science in the Kitchen!

*What is 'oxidation?'

The reason pesto (and guacamole) turn brown is because of a chemical reaction that occurs when cut basil has been exposed to air. The reaction is known as oxidation.


Tip from Just Plant Fabulous: To prevent oxidation, you can blanch the basil leaves for a few seconds in boiling water until they turn bright green!!
